Pu-erh is a unique and unusual, slightly aged tea, famed for its medical qualities. It is unusual because unlike other teas, it uses an accelerated fermentation process called The Wo Dui (wet-piling) process, which involves piling, dampening, and turning the tea leaves. This process ensures even fermentation. Pu-erh is the most oxidized form of tea and can mellow and improve with age like fine wine. It’s distinct flavor comes from the fact that, after the leaves are picked, they are made into a sundried base tea called maocha, and then fermented. It produces a dark red liquor with full-bodied, earthy taste.
- Pour 6oz of simmering water over 1tsp of tea.
- Steep 2-4 minutes
